Watermelon salad with glace ginger syrup

Ingredients:
  • 125ml (1/2 cup) water
  • 70g (1/3 cup) caster sugar
  • 115g (1/2 cup) glace ginger, thinly sliced
  • 1 small seedless watermelon, rind removed, cut into thin wedges
  • 125.00 ml fresh mint leaves, finely shredded
  • 40g (1/4 cup) pistachio kernels, thinly sliced
Instructions:
  • In a small saucepan, gently simmer water, sugar, and ginger until sugar dissolves, about 2 minutes. Increase heat and boil for another 2 minutes until the syrup thickens slightly. Let it cool for 15 minutes, then chill in the fridge for 30 minutes before using.
  • In a large bowl, combine watermelon and ginger syrup. Add mint and gently toss. Serve in bowls and sprinkle with pistachios.
