Watermelon-Lime Sorbet with Asti Spumante

Try this irresistible frozen treat - a refreshing, sweet and tangy sorbet!
Ingredients:
  • 1 whole watermelon (5 lb)
  • 1 1/2 cups sugar
  • 2 teaspoons finely shredded lime peel
  • 2 tablespoons fresh lime juice
  • 1 tablespoon vodka, if desired
  • 1 1/2 cups Asti Spumante, champagne or sparkling grape juice
Instructions:
  • Peel the watermelon and chop it into 1-inch cubes to yield 6 cups.
  • Combine fresh watermelon, a hint of sugar, zesty lime peel, tangy lime juice, and a splash of vodka (if desired) in a bowl or food processor. Puree for 2 minutes until velvety smooth. Transfer the mixture to a large bowl, cover, and refrigerate for 1 hour. Chill the ice-cream maker bowl in the freezer.
  • Follow the manufacturer's directions to freeze the watermelon mixture in an ice-cream maker until it reaches a sorbet consistency. Transfer the sorbet into a medium bowl, cover it, and freeze for 2 hours, or until it becomes firm.
  • Scoop sorbet into 6 wine glasses, and top each with 1/4 cup Asti Spumante before serving promptly.
