Whip up a tasty marinade for flavorful lamb chops using basic pantry staples.
Ingredients:
  • 260.00 gm tomato sauce
  • 125.00 gm white wine
  • 23.40 gm dijon mustard
  • 24.40 gm Worcestershire sauce
  • 125.00 ml plain flour
  • 45.00 gm brown sugar
  • 56.88 gm olive oil
  • 2 brown onions, cut into thin wedges
  • 1 red capsicum, deseeded, thinly sliced
  • 250.00 ml chopped celery
  • 8 small lamb chump chops, trimmed
  • Mashed potatoes, to serve
  • Steamed vegetables (carrots and zucchini), to serve
Instructions:
  • Preheat your oven to 180°C. Combine tomato sauce, wine, mustard, and Worcestershire sauce in a jug. In a shallow dish, mix together flour, sugar, salt, and pepper. Set aside.
  • In a hot, oven-safe pan, sauté onion for 4 minutes. Then add capsicum and celery and cook for another 5 minutes. Transfer to a plate.
  • Coat the chops in the flour mixture and gently place them in the hot pan. Sear for about 2 minutes on each side, or until deliciously golden brown. Transfer to a plate.
  • Cover the chops with a flavorful mixture of onions and mustard. Bake for 30 to 40 minutes until the chops are perfectly tender. Serve alongside creamy mashed potatoes and fresh vegetables.
