Whip up a quick and delicious dish by combining canned lentil soup with crushed tomatoes, sautéed onions and garlic, spinach, and red pepper flakes. Add cooked pasta and Parmesan before serving.
Ingredients:
  • 3 cloves garlic, minced
  • 1 (19 ounce) can lentil soup
  • 1 cup crushed tomatoes
  • 1 (10 ounce) package frozen chopped spinach
  • 1 (16 ounce) package ditalini pasta
  • ground black pepper to taste
  • 1 pinch crushed red pepper
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Sauté onion and garlic in oil until golden. Add lentil soup and tomatoes, bring to a boil. Mix in spinach and spices, simmer until flavors blend.
  • Cook the pasta in a large pot of boiling salted water until almost done, then drain it. Mix the pasta into the lentil sauce, cover, and keep warm for 20 minutes. Serve with Parmesan cheese.
