Light and flavorful cinnamon zucchini bread with a twist of white whole-wheat flour.
Ingredients:
  • 3 eggs
  • 1.5 cups white sugar
  • 1 cup canola oil
  • 1 tablespoon vanilla extract
  • 2 cups grated zucchini
  • 1.5 cups unbleached all-purpose flour
  • 1.5 cups white whole-wheat flour
  • 0.5 teaspoon baking powder
  • 0.75 teaspoon salt
  • 1 tablespoon ground cinnamon
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Prepare two 4x8-inch loaf pans by greasing and flouring them.
  • Combine eggs, sugar, canola oil, vanilla extract, and zucchini in a large bowl and beat until mixture is well combined.
  • Combine unbleached flour, white whole-wheat flour, baking soda, baking powder, salt, and cinnamon in a separate bowl and sift them together.
  • Gradually incorporate the dry ingredients into the zucchini mixture, gently stirring until fully mixed.
  • Transfer the batter into the greased loaf pans.
  • Bake until bread is golden brown and a toothpick inserted in the center comes out clean, 40 to 50 minutes in a preheated oven.
