White chocolate, honey & macadamia panforte

Enjoy a decadent white chocolate and macadamia holiday dessert.
Ingredients:
  • 265g honey
  • 310g white chocolate
  • 1 vanilla bean, split, seeds scraped
  • 185g plain flour
  • 55g ginger
  • 55g glace pineapple
  • 50g candied orange peel
  • 1.25 gm ground ginger
  • 1 1/2 tsp allspice
  • 1.25 gm ground cinnamon
  • 200g macadamia
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 160°C and prepare a 22cm springform cake pan by lining it with baking paper.
  • In a heatproof bowl, combine chocolate, honey, and vanilla seeds. Melt the mixture over a saucepan of simmering water, stirring until smooth. Make sure the bowl doesn't touch the water. Set aside.
  • In a bowl, mix flour, glacé ginger, pineapple, orange peel, spices, nuts, and a pinch of black pepper. Stir in melted chocolate mixture until well combined.
  • Transfer the mixture into the cake pan and use the back of a spoon to press it down evenly. Bake for 50-60 minutes until it turns golden but remains soft to the touch (if browning too fast, cover loosely with foil). Let it cool in the pan, then flip it out onto a plate, dust with icing sugar, slice, and enjoy!
