Lemon coffee cake with white chocolate chip streusel for a sweet and textured twist.
Ingredients:
  • cooking spray
  • 1 cup all-purpose flour
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 4 tablespoons unsalted butter, melted
  • 0.5 cup unsalted butter, softened
  • 0.5 cup white sugar
  • 3 tablespoons lemon zest
  • 2 large eggs
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 0.5 cup sour cream
  • 0.5 cup white chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C). Grease an 8-inch springform or cake pan with cooking spray and line the bottom with parchment paper; then, it's all set to go!
  • Combine flour and sugars in a small bowl using a fork. Stir in melted butter until the mixture is crumbly, leaving some larger crumbs. Set the topping aside as you prepare the cake.
  • In a large bowl, blend together butter, sugar, and lemon zest until light and fluffy using an electric mixer for about 3 minutes. Mix in eggs, lemon juice, baking powder, vanilla, salt, and cinnamon until well combined for about 3 minutes. Gradually add flour on low speed, stir until combined. Lastly, mix in sour cream and milk until the batter is smooth for about 4 minutes.
  • Gently mix in white chocolate chips, then transfer the batter into the pan and generously sprinkle with the topping.
  • Bake in the preheated oven for 40 minutes until lightly golden brown and a toothpick comes out clean. Allow to cool on a wire rack for 30 minutes before removing from the pan and serving.
