Indulge in this sophisticated white chocolate mousse, a luscious treat in every bite.
Ingredients:
  • 4 egg yolks
  • 1/4 cup sugar
  • 1 cup whipping (heavy) cream
  • 1 cup white baking chips
  • 1 1/2 cups whipping (heavy) cream
  • Chocolate curls, if desired
Instructions:
  • In a small bowl, use an electric mixer on high speed to beat the egg yolks for about 3 minutes until thick and lemon colored. Gradually mix in the sugar.
  • Warm 1 cup of whipping cream in a 2-quart saucepan on medium heat until just hot. Slowly whisk at least half of the cream into the egg yolk mixture, then combine it back into the warm cream in the saucepan. Cook on low heat for about 5 minutes, whisking constantly, until the mixture thickens (don't let it boil).
  • Fold in the baking chips until fully melted. Chill the mixture in the refrigerator for about 2 hours, stirring occasionally, until perfectly chilled.
  • Whip 1 1/2 cups of chilled whipping cream until stiff peaks form. Gently fold in the refrigerated mixture. Spoon the mixture into parfait or wine glasses and top with chocolate curls. Keep covered in the refrigerator.
