Elevate your vegetarian dinner with a simple, delicious whole roasted cauliflower seasoned with smoky paprika.
Ingredients:
  • 1 small head cauliflower
  • 1.5 teaspoons fennel seeds
  • 1.5 teaspoons smoked paprika
  • 1.25 teaspoons sea salt
  • 0.5 teaspoon garlic powder
  • 0.5 lemon, juiced
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Remove any large leaves from the cauliflower and trim the stalk to ensure the cauliflower can sit flat in the Dutch oven.
  • Crush fennel seeds with a mortar and pestle, then combine with smoked paprika, salt, pepper, and garlic powder. Whisk in olive oil to create a flavorful paste. Massage the paste onto the cauliflower and finish with a generous drizzle of fresh lemon juice.
  • Bake covered in a preheated oven for about 30 minutes until tender. Uncover, baste with any juices, then bake uncovered for another 15 minutes until the top is browned and the center is completely tender when pierced with a paring knife.
