Savory wild and brown rice pilaf with vegetables and herbs, perfect for serving with game birds. Prep ahead and reheat in microwave for convenience.
Ingredients:
  • 1.5 cups uncooked wild rice
  • 3 cups boiling water
  • 1 cup uncooked brown rice
  • 1 cup diced onion
  • 1 cup diced carrots
  • 0.75 cup diced celery
  • 3 (14.5 ounce) cans chicken broth
  • 0.5 teaspoon ground thyme
  • 0.25 teaspoon dried marjoram
  • 0.25 teaspoon ground black pepper
Instructions:
  • In a sturdy saucepan, immerse wild rice in boiling water for 30 minutes. Discard the water and rinse the rice thoroughly.
  • Combine the drained wild rice, brown rice, onion, carrots, celery, chicken broth, thyme, marjoram, salt, and black pepper in a large skillet or Dutch oven and bring to a boil over high heat.
  • Simmer on low heat with lid on until rice is tender and liquid is absorbed, about 50 to 60 minutes.
