Indulge in a luxuriously creamy wild mushroom risotto bursting with rich flavors.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 small onion, finely chopped (1/4 cup)
  • 8 ounces wild or white mushrooms, sliced (2 1/2 cups)
  • 1 cup uncooked Arborio or short-grain rice
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups chicken or vegetable broth
Instructions:
  • In a 10-inch skillet over medium-high heat, sauté butter, onion, and mushrooms for 2 minutes until onion is soft. Stir in rice until coated with butter.
  • Add delicious chicken broth and gently mix it in.
  • Bring to a boil, stir well, then simmer covered for 20-25 minutes until rice is almost tender and liquid is absorbed. Mix in cheese and let it sit covered for 5 minutes before serving.
