Ingredients:
  • 1 lemon, cut in half
  • 10 anchovy fillets, finely chopped
  • 40.00 ml baby salted capers, rinsed
  • 36.40 gm extra virgin olive oil
  • 1 raddichio treviso, cut into thin wedges lengthways
  • 2 witlof, cut into thin wedges lengthways
  • 1 head curly endive, washed, cut into 10cm lengths
Instructions:
  • Juice half of the lemon and thinly slice the remaining half widthways after peeling. Set aside.
  • Combine anchovy fillets, capers, fresh lemon juice, and olive oil in a small bowl, whisking until well mixed.
  • Arrange the raddichio, witlof, and endive leaves beautifully on a serving platter. Layer on the lemon slices and generously drizzle with the flavorful anchovy and caper dressing.
