Irresistible lemon blueberry muffins with juicy blueberries, fresh lemon zest, and moist sour cream.
Ingredients:
  • 3.25 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1.3333333730698 cups white sugar
  • 1.25 cups milk
  • 1 cup sour cream
  • 0.5 cup melted butter
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1.5 cups frozen blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 16 muffin cups with paper liners.
  • Combine the flour, baking powder, baking soda, and salt by sifting them together in a bowl.
  • In a large bowl, mix sugar, milk, sour cream, butter, eggs, and lemon zest. Use an electric mixer on low until well blended. Gently fold in the flour mixture until just moistened. Carefully fold in blueberries, being mindful not to overmix to prevent the batter from turning purple.
  • Spoon batter into muffin cups, filling them three-quarters full.
  • Bake in the warm oven until beautifully golden and the tops bounce back when gently touched, this should take around 30 to 35 minutes. Allow to cool for 10 minutes before indulging.
