Irresistible potato salad with tangy, creamy dressing, featuring potatoes, eggs, and celery.
Ingredients:
  • 6 medium potatoes
  • 2 large eggs, beaten
  • 1 teaspoon cornstarch
  • salt to taste
  • 1 (5 ounce) can evaporated milk
  • 0.5 cup vinegar
  • 1 teaspoon prepared yellow mustard
  • 0.25 cup butter
  • 1 cup mayonnaise
  • 6 large hard-cooked eggs, diced
  • 1 cup celery, chopped
Instructions:
  • In a large pot, simmer potatoes in salted water until tender, about 20 minutes. Drain and let cool.
  • As the potatoes simmer, blend sugar, 2 beaten eggs, and cornstarch in a saucepan while seasoning with salt.
  • Combine milk, vinegar, and mustard in a saucepan and cook over medium heat until thickened, around 10 minutes. Remove from heat and stir in butter. Chill until cold, then mix in mayonnaise.
  • Peel and dice the potatoes, then mix them in a bowl with hard-cooked eggs, onion, celery, and 1 teaspoon of salt.
  • Gently fold the dressing into the potato salad until well coated.
  • Refrigerate for at least 3 hours or preferably overnight before serving.
