Irresistibly tender scones with sour cream. Enjoy with clotted cream, butter, and assorted jams.
Ingredients:
  • 1.75 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.25 cup white sugar
  • 0.125 teaspoon salt
  • 5 tablespoons unsalted butter
  • 0.5 cup dried currants
  • 0.25 cup sour cream
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and give a little love to a baking sheet with some grease.
  • Prepare the scones by sifting flour, baking powder, sugar, and salt into a large bowl. Incorporate butter using a pastry blender or by rubbing between your fingers until the mixture forms pea-sized lumps. Gently mix in the currants.
  • Combine milk and sour cream in a measuring cup, then fold into the flour mixture until just moistened, being careful not to overmix.
  • Using hands dusted with flour, shape dough into balls measuring 2 to 3 inches in diameter. Gently press them onto the baking sheet so they are touching slightly.
  • Prepare the egg wash by combining eggs and milk, then generously brush the scones' tops with the mixture before allowing them to rest for approximately 10 minutes.
  • Bake until the tops are golden brown, 10 to 15 minutes in the preheated oven.
