Vegan pancakes using custard powder for cakelike texture. Add fruit, top with syrup or jam. Irresistibly close to non-vegan pancakes.
Ingredients:
  • 4 cups self-rising flour
  • 1 tablespoon custard powder
  • 2 cups soy milk
Instructions:
  • Combine flour, sugar, and custard powder in a large bowl. Whisk in soy milk until smooth.
  • Preheat a griddle over medium heat and spray with nonstick cooking spray. Pour batter onto the griddle and cook until bubbles form. Flip with a spatula and cook until golden on the other side.
