Fail-proof moist loaf baked overnight for easy, soft crusts.
Ingredients:
  • 6 ounces butter
  • 1 cup white sugar
  • 3 tablespoons golden syrup
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground allspice
  • 1 teaspoon baking soda
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare an 8x4 inch loaf pan by greasing and flouring it.
  • Combine butter, sugar, golden syrup, and milk in a saucepan. Bring to a boil, remove from heat, and set aside. In a large bowl, sift flour, baking soda, ginger, and allspice. Stir in the mixture until just blended. Pour batter into prepared pan.
  • Reduce the oven temperature to 325°F (160°C) and bake for 1 hour or until the loaf springs back when lightly touched on top.
