Indulge in aromatic Asian-style yellow fish curry.
Ingredients:
  • 1 brown onion, cut into large wedges
  • 100g curry paste
  • 250ml fish stock
  • 500g sweet potato, cut into 5mm rounds
  • 700g blue grenadier fish fillets, cut into 3cm strips
  • 250g green beans, trimmed, cut into 4cm lengths
  • 400ml can coconut milk
  • 16.00 gm brown sugar
  • Steamed jasmine rice, to serve
Instructions:
  • Warm the oil in a large deep frying pan over medium heat. Sauté the onion for 5 minutes until softened. Stir in the curry paste and cook for 30 seconds until fragrant. Pour in the stock and let it simmer. Add the sweet potato, cover, and cook for 10 minutes until almost tender.
  • Combine the blue grenadier and beans in the pan and cook covered for 5 minutes until the fish is cooked through. Stir in coconut milk, sugar, fish sauce, and lime juice and cook for an additional minute until heated through. Serve over steamed jasmine rice and garnish with coriander leaves.
