Yiayia Margarita's horiatiki (village salad) from Santorini

Transport yourself to a secluded hillside home overlooking a red beach, where Margarita prepares a rustic village salad with the best local tomatoes and a generous slab of feta cheese, all enhanced by the unique touch of capers and caper leaves from the Cycladic islands. Delicious simplicity at its finest.
Ingredients:
  • 2 large vine tomatoes roughly chopped
  • 1 small cucumber peeled and roughly chopped
  • 1 small red onion finely sliced
  • 1 green (bell) pepper finely sliced into rings
  • 1 tablespoon caper leaves
  • 1 tablespoon capers
  • handful of kalamata olives
  • 200 g (7oz) feta
  • 1 teaspoon dried oregano
  • olive oil for dressing the salad
Instructions:
  • In a bowl, toss together tomatoes, cucumber, and red onion. Top with green pepper, caper leaves, capers, kalamata olives, and a wedge of feta cheese. Sprinkle oregano over the top and drizzle generously with olive oil.
