Classic Greek youvetsi: meat or chicken, garlic, orzo pasta bake. Irresistible!
Ingredients:
  • 0.5 cup olive oil
  • 3 pounds cubed lamb stew meat
  • 1 (28 ounce) can whole peeled tomatoes, pureed in a food processor
  • 4 cloves garlic, roughly chopped
  • 0.5 teaspoon white sugar
  • salt and pepper to taste
  • 0.5 cup butter
  • 1 pound uncooked orzo pasta
  • 3 cups hot water
Instructions:
  • In a large saucepan over medium heat, sizzle olive oil until shimmering; sear meat until beautifully caramelized, for about 5 minutes. Introduce pureed tomatoes, garlic, sugar, salt, and pepper. Cover and let simmer for 1 hour, giving the occasional gentle stir. Allow to cool.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a skillet, melt butter over medium heat, then add orzo and saute until lightly browned, about 3 to 5 minutes. Transfer orzo to a baking pan, ensuring an even spread. Remove meat from the skillet and place it on top of the orzo. Pour tomato sauce evenly over the meat and add hot water before covering the pan with aluminum foil.
  • Place the dish in the preheated oven for about 1 hour, ensuring all water is absorbed and the orzo is tender. If needed, add more water during baking to prevent drying out.
