Delicious Japanese beef and potato croquettes, crispy-coated and fried to perfection.
Ingredients:
  • 3 medium russet potatoes, peeled, and chopped
  • 1 tablespoon butter
  • 3 onions, chopped
  • 0.75 pound ground beef
  • 4 teaspoons light soy sauce
  • all-purpose flour for coating
  • 2 eggs, beaten
  • panko bread crumbs
  • 0.5 cup oil for frying
Instructions:
  • 1. Place potatoes in a pot of salted boiling water and cook until tender, approximately 15 minutes. Drain and transfer to a large bowl. Add butter and mash with a fork or potato masher. Set aside.
  • In a large skillet over medium heat, warm 1 tablespoon of oil. Sauté onions until soft, then add beef and soy sauce. Cook until beef is browned and liquid evaporates, stirring constantly. Mix in potatoes with beef and onions, stirring until combined.
  • Warm up 1/2 cup of oil in a deep skillet or wok on medium-high heat.
  • Form the potato and beef mixture into 10 equally sized balls and flatten them into patties. Coat the patties in flour, dip them in egg, and cover with panko bread crumbs. Fry the patties in oil until golden brown on both sides.
