Za'atar-spiced chicken thighs, pan-roasted and oven-finished for a flavorful twist on a classic dish.
Ingredients:
  • 4 bone-in chicken thighs, with skin
  • 1 tablespoon extra-virgin olive oil
  • sea salt and freshly ground black pepper to taste
  • 3 tablespoons za'atar, divided, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Dry the chicken thoroughly using paper towels. Transfer the chicken to a bowl and drizzle with olive oil, then generously season with sea salt and black pepper on all sides.
  • Preheat a cast iron skillet over medium-high heat. Place the chicken thighs in the skillet, skin-side down. Sprinkle 1 teaspoon of za'atar over each thigh. Cook the chicken until the skin is crisp and browned, about 7 to 10 minutes.
  • Place the chicken skin side up and take the skillet off the heat. Sprinkle the remaining za'atar evenly over each chicken thigh. Drizzle some of the delicious rendered chicken fat from the pan on top of the za'atar.
  • Roast the skillet in the oven until the chicken is no longer pink near the bone and the juices run clear, approximately 15 minutes.
