Mouthwatering lamb cutlets paired with vibrant carrot salad - a winning combo sure to impress anyone.
Ingredients:
  • 25g zaatar
  • 12 lamb cutlets
  • 1 tsp cumin seeds
  • 1.25 gm sweet paprika
  • 1/4 tsp chilli flakes
  • 2 oranges
  • 3.60 gm honey
  • 2 large carrots, peeled, cut into julienne
  • 125.00 ml firmly packed flat-leaf parsley leaves
  • Green salad, to serve
Instructions:
  • In a bowl, mix za'atar with half of the oil. Rub this mixture onto the lamb cutlets and let it marinate.
  • Toast cumin, paprika, and chili in a dry frying pan over low heat for 1 minute until fragrant. Transfer to a bowl. Use a citrus zester to strip orange rind and add it to the bowl. Peel and segment oranges. Squeeze juice from membranes into the spice mixture, add honey and remaining oil. Season with salt and pepper, then mix thoroughly. Add orange segments, carrot, and parsley, toss to combine.
  • Preheat a char-grill pan or barbecue over medium-high heat. Grill lamb cutlets for 3 minutes on each side for medium-rare. Serve with carrot salad and a green salad.
