Za'atar Pull-Apart Rolls

Homemade dough coated in za'atar and olive oil creates fragrant, irresistible Middle Eastern pull-apart rolls.
Ingredients:
  • 2 eggs
  • 0.66666668653488 cup warm whole milk (110 degrees F (43 degrees C))
  • 1 (.25 ounce) package active dry yeast
  • 1 teaspoon white sugar
  • 3.25 cups all-purpose flour, divided
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter, melted
  • 0.5 teaspoon fine sea salt
  • cooking spray
  • 0.5 cup za'atar, divided
  • 0.33333334326744 cup olive oil
Instructions:
  • In the bowl of a stand mixer with the paddle attachment, mix together warm milk, yeast, and sugar until foamy, about 5 to 10 minutes.
  • Beat the milk mixture on low until smooth. Stir in 1 cup of flour until just combined. Mix in the melted butter, 2 tablespoons of olive oil, and 1/2 cup of flour, combining thoroughly. Incorporate the eggs. Add the remaining 1 3/4 cups of flour and salt, beating until a soft, sticky dough forms.
  • Prepare a large bowl with a light coating of cooking spray, then gently place the dough in it. Cover the bowl loosely and allow the dough to rise until it doubles in size, which should take around 1 hour.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 12-cup muffin tin with cooking spray.
  • Gently deflate dough, then shape into 36 small dough balls.
  • Combine 6 tablespoons of za'atar with 1/3 cup of olive oil in a bowl. Coat dough balls evenly with the oil mixture. Place 3 dough balls in each muffin cup and sprinkle the remaining 2 tablespoons of za'atar over the dough.
  • Grease plastic wrap and drape it over the muffin tin. Allow the dough balls to rise until they puff up over the rim of the tin, approximately 25 minutes.
  • Bake in the preheated oven for 25 minutes until puffed up and golden. Cool in the pan for 5 minutes, then transfer to a wire rack to cool for another 5 minutes.
