Ingredients:
  • 40.00 ml finely chopped thyme
  • 24.00 gm sesame seeds
  • 20.00 ml sumac (see note)
  • 18 (about 1.8kg) lamb cutlets, French trimmed
Instructions:
  • In a large glass or ceramic bowl, mix thyme, sesame seeds, and sumac. Add the lamb and toss gently until fully combined. Cover with plastic wrap and refrigerate for 2 hours to enhance the flavors.
  • Preheat a sizzling barbecue on high heat. Season the succulent lamb generously with salt and pepper. Grill for 2 minutes on each side for a perfect medium doneness, or until it reaches your desired level of cooking. Place the flavorful lamb on a plate, cover it with foil, and let it rest for 5 minutes. Finally, present it on a beautiful platter for a stunning presentation.
