Irresistible potato bread recipe with unique flavors from buttermilk powder and instant potato flakes, yields 2 loaves.
Ingredients:
  • 4 cups water
  • 0.33333334326744 cup butter
  • 0.33333334326744 cup white sugar
  • 0.25 cup dry buttermilk powder
  • 4 teaspoons salt
  • 2 (.25 ounce) packages active dry yeast
  • 1 cup instant mashed potato flakes
  • 10 cups bread flour, divided
Instructions:
  • In a saucepan over low heat, gently simmer water, butter, sugar, buttermilk powder, and salt until combined. Remove from heat, cool to 105-110°F (41-43°C). Sprinkle yeast over mixture, let sit for 10 minutes until foamy. Mix in instant mashed potato flakes until well combined.
  • Add the yeast mixture to the standing mixer's work bowl with the dough paddle attachment, then gradually add the 8 cups of bread flour, incorporating 1 cup at a time.
  • Transfer the dough onto a floured surface and knead for 8 minutes, gradually incorporating the remaining flour. Once the dough is smooth and elastic, shape it into a ball and place it in a greased large bowl. Turn the dough to coat the top with grease, cover with a cloth, and allow it to rise in a warm spot for about 1 hour until doubled in size.
  • Prepare the loaf pans by lightly spraying them with cooking spray. Punch down the dough, then divide it into two pieces and shape each into a loaf. Put the loaves in the pans with the seam sides down, cover with a cloth, and allow them to double in size in a warm spot for about 30 minutes.
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Bake the bread in the preheated oven for 30 minutes until the tops are golden brown and the loaves sound hollow when tapped. Then, transfer to a wire rack to cool.
