Refreshing Zaru Soba: Japanese noodles with soy sauce, mirin, and sesame seeds, perfect for a hot day.
Ingredients:
  • 1 (8 ounce) package dried soba noodles
  • 1 cup prepared dashi stock
  • 0.25 cup soy sauce
  • 2 tablespoons mirin
  • 0.25 teaspoon white sugar
  • 2 tablespoons sesame seeds
  • 0.5 cup chopped green onions
  • 1 sheet nori (dried seaweed), cut into thin strips
Instructions:
  • Bring a pot of lightly salted water to a boil. Cook soba noodles for 5 to 8 minutes until tender, stirring occasionally. Drain and rinse with cold water to cool quickly.
  • In a small saucepan, mix dashi, soy sauce, mirin, and white sugar. Bring to a boil, then let it cool to room temperature for about 25 minutes.
  • Combine noodles with nutty sesame seeds, then distribute among 4 enticing serving bowls. Drizzle the aromatic dashi sauce over the noodles, and garnish with fresh green onions and savory nori.
