Savory muffins with grapes and garbanzo beans for a delicious blend of Greek and Indian flavors.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon baking soda
  • 0.25 cup cold butter, cut into small pieces
  • 0.75 cup milk
  • 0.5 cup canned garbanzo beans, drained and 1/4 cup liquid reserved
  • 1 tablespoon lemon zest
  • 1 cup grapes, halved
Instructions:
  • Preheat your oven to 400°F (200°C) and generously grease a muffin tin with butter.
  • In a large bowl, combine all-purpose flour, whole-wheat flour, sugar, baking powder, cumin, baking soda, garlic powder, and salt. Using two knives or your fingers, blend in butter until mixture resembles coarse cornmeal.
  • Combine milk, reserved garbanzo bean liquid, lemon zest, and egg until smooth. Mix into dry ingredients until just moistened. Gently fold in garbanzo beans and grapes until combined. Spoon batter into muffin tin.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 15 minutes.
