"Delicious pasta salad combines chicken, shrimp, and fresh summer veggies for a satisfying meal."
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 (16 ounce) package uncooked farfalle (bow tie) pasta
  • 0.5 pound frozen cooked cocktail shrimp
  • 1 (2.25 ounce) can diced black olives, drained
  • 1 pint cherry tomatoes
  • 0.5 cup baby carrots, chopped
  • 1 cucumber, diced
  • 0.5 cup balsamic vinegar
  • 1 (6 ounce) package feta cheese, crumbled
  • salt-free seasoning blend to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Transfer the chicken to a baking dish and cook in a preheated oven for 25 minutes, or until juices run clear. Allow the chicken to rest, then slice into bite-size pieces.
  • Bring a large pot of gently salted water to a boil. Cook farfalle pasta for 8 to 10 minutes until al dente. Drain and let cool to room temperature.
  • Combine chicken, pasta, shrimp, olives, tomatoes, carrots, and cucumber in a large bowl. Toss with balsamic vinegar and feta cheese, then season with salt-free seasoning blend.
