"Spicy, flavorful Yemeni green sauce, zhug, adds a kick to dips, marinades, and soups."
Ingredients:
1ounceflat-leaf parsley, stems removed
1ouncefresh cilantro, stems removed
2ice cubes
3green bird's eye chile peppers, stems removed
2clovesgarlic
0.25lemon, juiced and zested
0.25 teaspoonground cumin
0.25 teaspoonground coriander
salt and pepper to taste
0.25 cupextra-virgin olive oil, or as needed
Instructions:
Prepare fresh parsley and cilantro, ensuring they are clean and dry, then transfer them into a food processor. Combine them with ice cubes, chiles, garlic, lemon juice and zest, cumin, coriander, salt, and pepper. Slowly pour in 2 tablespoons of olive oil and blend until a uniform paste forms, adding extra oil if necessary to reach desired consistency.
Chill the sauce in a covered container for at least 1 hour to enhance its flavors.
