Zoe's Easy, Rustic Mini Pizzas

Irresistible mini pizzas: fluffy, tender crust topped with fresh sauce and gooey cheese.
Ingredients:
3cups all-purpose flour
2cups warm water
3tablespoons olive oil
2tablespoons instant yeast
1teaspoonkosher salt
1teaspoonwhite sugar
1.5 cups prepared tomato sauce
1clovegarlic, diced
2tablespoons fresh oregano, diced
2tablespoons fresh basil, diced
1tablespoonwhite vinegar
1cupshreddedmozzarella cheese
1cupchoppedfresh spinach, or to taste
Instructions:
Combine flour, water, olive oil, yeast, salt, and sugar in a large bowl until well mixed. Use an ice cream scoop to portion 12 dough balls onto the pan. Gently flatten the balls; dough will be sticky. Allow to rise for about 30 minutes without kneading or deflating.
Preheat the oven to 425 degrees F (220 degrees C) and grease a baking pan. Create steam by tossing an ice cube into the oven.
In a bowl, mix together tomato sauce, garlic, oregano, and basil. Stir in olive oil, vinegar, and sugar until well combined.
Top each dough ball generously with tomato sauce, sprinkle with a generous amount of mozzarella cheese, and layer with fresh spinach leaves.
Place in the oven already heated, bake for 15 minutes, then allow to cool slightly before serving.
