Impress kids with a showstopping birthday cake!
Ingredients:
  • 340g packet golden buttercake cake mix or 1 quantity Homemade buttercake (see related recipe)
  • 30.00 ml green sprinkles
  • 30.00 ml red sprinkles
  • 30.00 ml purple sprinkles
  • 30.00 ml orange sprinkles
  • 30.00 ml pink sprinkles
  • 5 red licorice twists
  • 24 sherbet lollipops
  • 180g packet jungle animal lollies
  • 7 animal icing cupcake toppers
  • 12 blue M&Ms
  • 18 blue mini M&Ms
  • 20 green mini M&Ms
  • 2 vanilla marshmallows
  • 20cm piece licorice strap, cut into thin strips
  • 4 chocolate bullets
  • 250g butter, softened
  • 450.00 gm icing sugar mixture
  • 41.20 gm milk
  • Blue, green, red, orange and pink food colouring pastes (see note)
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease 6 mini loaf pan holes and a 5cm-deep, 6.5cm x 12.5cm loaf pan. Line both pans with baking paper, leaving a 2cm overhang on the long sides.
  • Follow the instructions on the cake mix packet or homemade cakes recipe. Divide 1/3 cup of batter into each compartment of the mini loaf pan. Pour the rest of the batter into the regular loaf pan. Bake the mini loaf pan for 20 minutes until cooked. Bake the regular loaf pan for 35 minutes until cooked. Let them sit in the pans for 5 minutes before transferring to a wire rack to cool.
  • Prepare the icing: In a bowl, use an electric mixer to whip the butter until pale. Slowly incorporate the icing sugar mixture and milk, continuing to beat until well combined.
  • With a serrated knife, even out the tops of 1 mini loaf and larger loaf. Securely place the trimmed mini loaf on top of the large loaf using icing to create the engine (refer to Cooking class for visual).
  • With precision, carve shallow holes into the tops of the mini loaves using a small sharp knife and a teaspoon, creating carriage shapes while keeping a 1.5cm border around the holes.
  • Divide the icing evenly into 6 bowls and color each one with blue, green, red, violet, orange, and pink. Spread the top and sides of the engine with the blue icing. Spread each carriage with a different colored icing. Place sprinkles on separate plates and coat the sides of each carriage with matching sprinkles.
  • Arrange carriages and engine on board. Connect them using licorice twists. Trim lollipop sticks, leaving 2cm attached, then insert them into loaves to form wheels. Fill carriages with animals. Decorate engine with M&Ms, mini M&Ms, and animal cake toppers. Stack marshmallows using icing to secure, then gently press onto the engine to create the chimney. Outline the engine with licorice strips and arrange bullets along the front. Serve.
