Zesty herb zucchini bursts with flavor.
Ingredients:
  • 27.30 gm olive oil
  • 550g sliced zucchini
  • 18.20 gm extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 30.90 gm White Italian dressing
  • 30.00 ml fresh continental parsley, chopped
  • 30.00 ml fresh mint
  • 18.20 gm extra virgin olive oil, to drizzle
Instructions:
  • In a large non-stick frying pan over medium-high heat, sizzle sliced zucchini in batches until golden, about 3 minutes per side. Transfer to a bowl and season to taste.
  • In a pan over medium-low heat, warm up extra virgin olive oil. Saute garlic cloves, stirring, for 1 minute until fragrant. Let cool for a minute. Mix in Italian Dressing.
  • Combine the garlic mixture, continental parsley, and mint with the zucchini. Mix well and season to taste. Refrigerate for 8 hours to enhance the flavors.
  • Allow to come to room temperature, then generously drizzle with 1 tablespoon of extra virgin olive oil.
