Zucchini, pea and mint fritters

Delicious vegetarian zucchini fritters, perfect for snacking.
Ingredients:
  • 500g zucchini
  • 2 green onions, chopped
  • 250.00 ml frozen peas
  • 62.50 ml chopped fresh mint leaves
  • 187.50 ml plain flour
  • 2 eggs, lightly beaten
  • Vegetable oil, for shallow frying
Instructions:
  • Press out any extra liquid from the zucchini.
  • Combine zucchini, onion, peas, mint, and flour in a large bowl. Mix in the egg and season with salt and pepper. Stir until well combined.
  • Pour oil into a deep frying pan, filling it about 5mm up the side. Warm over medium heat. Spoon 2 level tablespoons of batter into the pan, spreading slightly with a spatula. Repeat to create 4 rounds.
  • Cook each side for 2 to 3 minutes, or until beautifully golden and fully cooked. Place on a paper towel-lined plate. Repeat for the rest of the mixture. Serve and enjoy!
