Zucchini & almond pasta

Ingredients:
  • 400g fusilli (or other short pasta)
  • 4 zucchini, coarsely grated
  • 125.00 ml slivered almonds, lightly toasted
  • 40.00 ml chopped flat-leaf parsley
  • 20.00 ml chopped mint leaves
  • 40.00 ml grated parmesan, plus extra to serve
Instructions:
  • Prepare the pasta in a large saucepan of boiling salted water following the packet instructions until al dente.
  • Heat the oil in a large frypan over medium heat, then sauté the garlic for 30 seconds.
  • Cook the zucchini until all the liquid evaporates, about 5 minutes. Stir in almonds and herbs, season with salt and pepper.
  • Drain the cooked pasta, then add it to the pan with the parmesan and toss together until well combined.
  • Garnish with additional parmesan and serve in bowls.
