Zucchini and goat’s cheese tartlets recipe

Make quick and impressive tarts using frozen pastry for a stunning appetizer.
Ingredients:
  • 2 sheets frozen puff pastry, just thawed
  • 3 large zucchini, thinly sliced crossways
  • 100g goat’s cheese, crumbled
  • 20g parmesan
  • 20.00 ml thyme sprigs
Instructions:
  • Preheat your oven to 200°C. Grease 6 holes in a 1/3-cup (80ml) muffin pan. Cut each pastry sheet into three 6cm-wide strips using a small sharp knife.
  • Lay a pastry strip on a clean work surface. Line one half with slightly overlapping zucchini slices. Sprinkle on some goat’s cheese and parmesan, then season. Fold over the other half to cover the filling. Roll up tightly from a short end and place in a prepared hole. Repeat with remaining ingredients.
  • Gently coat the tarts with a mist of olive oil spray and garnish with fragrant thyme sprigs. Bake until the pastry turns a lovely golden brown and is fully cooked, approximately 25-30 minutes. Allow the tarts to cool for a bit before carefully transferring them to a serving platter. Enjoy them warm or at room temperature.
