Light and moist zucchini bread with carrots, a healthy twist using applesauce instead of oil.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon allspice
  • 1.5 cups white sugar
  • 1 cup unsweetened applesauce
  • 3 eggs
  • 2 cups grated zucchini
  • 0.5 cup grated carrots
Instructions:
  • Preheat the oven to a perfect 350 degrees F (175 degrees C) while generously greasing two 9x5-inch loaf pans.
  • Combine flour, cinnamon, salt, baking soda, baking powder, nutmeg, and allspice in a bowl. In another bowl, whisk together sugar, applesauce, and eggs. Gently combine wet and dry ingredients, then fold in zucchini and carrots. Divide batter into loaf pans.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted in the center comes out clean.
