Zucchini flower quesadillas

Irresistible vegetarian Mexican quesadillas that will wow your guests.
Ingredients:
  • 10 baby zucchinis (flowers attached - see note)
  • 4 large flour tortillas
  • 240g cheese
  • 1 tsp dried chilli flakes
  • 36.80 gm sunflower oil
Instructions:
  • Using a mandoline for precision, thinly slice zucchinis lengthways. Next, delicately remove the pistil and stamen from the flowers, then gently tear the petals.
  • Lay down 2 tortillas and generously sprinkle them with cheese. Add sliced zucchini, half of the flowers, and a sprinkle of chili flakes. Finish by placing the remaining tortillas on top.
  • In a frypan over medium heat, sizzle 1 tablespoon of oil. Grill each quesadilla for 2-3 minutes per side until the cheese is gooey. Repeat the process with the next tablespoon of oil and quesadilla.
  • Transfer quesadillas to a plate, sprinkle with sea salt, and top with the rest of the zucchini flowers. Cut into 9 pieces and serve promptly.
