Savory zucchini lasagna layers meaty ground beef and gooey mozzarella for a delicious twist on the classic dish, no ricotta needed.
Ingredients:
  • 4 medium zucchini, sliced lengthwise and cut into 1/2-inch slices
  • 1 tablespoon salt, or more to taste
  • 1 tablespoon olive oil, or more as needed
  • 0.5 medium onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 1 medium potato, diced
  • 1 large red bell pepper, diced
  • 1 (26 ounce) jar marinara sauce
  • 1 (8 ounce) package mozzarella cheese, grated
Instructions:
  • Place zucchini slices on a plate and sprinkle with salt. Allow to rest for 10 to 15 minutes while you dice the remaining ingredients.
  • In a hot skillet, sauté oil, onion, and garlic until onion is slightly brown and translucent, around 5 minutes. Add ground beef, potato, and bell pepper; cook until beef is crumbled and browned, about 5 minutes. Stir in marinara sauce.
  • Preheat your oven to 375 degrees F (190 degrees C) to create the perfect cooking environment for your dish.
  • Alternate between spreading marinara sauce, layering zucchini slices, and sprinkling mozzarella cheese in a casserole dish until all ingredients are used, finishing with a final layer of mozzarella cheese. Cover the dish.
  • Bake the lasagna in a covered, preheated oven for 30 minutes. Uncover and bake for an additional 15 minutes until cooked through and bubbly.
