Creamy zucchini soup, no cream needed. Quick and easy, ready in under 30 minutes. Enjoy hot or cold.
Ingredients:
  • 2 pounds zucchini, cut into chunks
  • 1 (15 ounce) can chicken broth
  • 1 teaspoon curry powder
Instructions:
  • In a saucepan over medium heat, melt butter. Stir in zucchini, chicken broth, salt, and curry powder. Simmer until zucchini is tender, approximately 15 minutes.
  • Blend the soup in batches until smooth, making sure not to fill the blender more than half full. Pulse a few times then blend until fully pureed, ensuring the lid is securely in place.
