Enhance zucchini cake with raisins, coconut, or nuts for a luscious and dense treat, reminiscent of carrot cake.
Ingredients:
  • 3 cups grated unpeeled zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups white sugar
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 4 eggs
  • 1 cup unsweetened applesauce
  • 0.75 cup vegetable oil
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch pan.
  • Drain grated zucchini in a colander.
  • In a large bowl, combine flour, baking soda, baking powder, white sugar, brown sugar, cinnamon, cloves, nutmeg, and salt, whisking until fully mixed. In a separate bowl, beat eggs, applesauce, oil, and vanilla until smooth. Gently fold in the flour mixture, then add zucchini and stir until combined. Pour the batter into the prepared pan.
  • Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before slicing.
