Impress guests with zucchini-feta rolls, marinated for 1-2 days, an ideal make-ahead appetizer.
Ingredients:
  • olive oil, divided
  • 5 zucchinis, thinly sliced lengthwise
  • 1 (4 ounce) package crumbled feta cheese
  • 3 cloves garlic, minced
  • 2 tablespoons dried Italian herbs
  • 4 tablespoons balsamic vinegar
Instructions:
  • In a large skillet, heat 2 tablespoons of olive oil. Cook zucchini slices in batches until tender and golden on both sides, for about 5 to 10 minutes. Add more olive oil if necessary. Transfer the zucchini slices to paper towels to drain.
  • Top zucchini slices with feta, roll them up, and secure with toothpicks.
  • Place the zucchini rolls snugly in a dish, then generously sprinkle them with garlic, Italian herbs, and balsamic vinegar. Cover the dish and let the flavors meld in the fridge for 1 to 2 days.
