Transform zucchini into a refreshing lemon sorbet - a delightful disguise for picky eaters!
Ingredients:
  • 2 zucchini
  • 0.5 cup lemon juice
  • 1 tablespoon lemon zest
  • 0.66666668653488 cup sugar
  • 2 sprigs mint leaves
Instructions:
  • Split the zucchini in half and remove the seeds. Chop the zucchini and combine with lemon juice, lemon zest, sugar, and mint in a blender. Blend until smooth, then strain the mixture through a mesh strainer into a bowl. Chill in the refrigerator for 1-2 hours before serving.
  • Transfer the mixture into an ice cream maker and freeze following the manufacturer's instructions until it reaches your preferred thickness.
