Indulge in a Cajun-inspired creamy shrimp pasta with Alfredo sauce for a taste of the bayou.
Ingredients:
  • 0.5 (16 ounce) package dry fettuccine pasta
  • 1.5 pounds uncooked medium shrimp, peeled and deveined
  • 2 tablespoons salt-free Cajun seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons butter
  • 2 tablespoons salted butter
  • 1 tablespoon freshly minced garlic
  • 1 (8 ounce) package cream cheese, cubed
  • 0.5 teaspoon salt-free Cajun seasoning
  • 2 cups 1% milk
  • 2 cups freshly grated Parmesan cheese
  • 0.5 (1 pound) package frozen fire-roasted pepper and onion blend
  • 0.25 teaspoon freshly ground black pepper
  • 2 teaspoons chopped fresh parsley
Instructions:
  • Bring a large pot of lightly salted water to a rolling boil. Cook fettuccine until al dente, about 8 minutes.
  • Season shrimp generously with flavorful Cajun seasoning, salt, and pepper.
  • In a large skillet over medium heat, melt butter until sizzling. Add shrimp and sauté until they turn pink and opaque, approximately 4 minutes. Place the cooked shrimp on a plate and reserve for later use.
  • In the same skillet, melt butter for Alfredo sauce. Stir in garlic until fragrant, about 30 seconds. Add cream cheese cubes and Cajun seasoning. Whisk until smooth. Gradually pour in milk, whisking continuously, adding about 1/4 cup at a time.
  • Combine Parmesan cheese, roasted pepper blend, and black pepper. Mix thoroughly until the sauce thickens to your liking, approximately 2 to 3 minutes. Remove from heat.
  • Add the drained pasta to the skillet, ensuring it is evenly coated. Top with the shrimp and serve, garnished with parsley.
