"Dry" Mexican Noodle Soup (Sopa Seca de Fideos)

Mexican tomato soup with fried fideo noodles for a versatile dish that can be enjoyed as stew or tomato sauce.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 (7 ounce) package fideo noodles
  • 0.25 white onion, roughly chopped
  • 1 clove garlic, sliced
  • 1.25 cups tomato puree
  • 2 bay leaves
  • 0.75 cup water
  • 1 teaspoon chicken bouillon granules
  • 1 pinch salt to taste
Instructions:
  • 1. In a large skillet over medium heat, heat oil until shimmering. Add noodles and fry until golden brown, about 4 minutes. Remove noodles to a bowl. 2. Add onion and garlic to the skillet and cook until translucent, about 5 minutes. 3. Stir in tomato puree and bay leaves and cook until heated through, about 3 minutes.
  • Carefully transfer tomato mixture to a blender and add water. Secure the lid and pulse a few times before blending. Return mixture to the skillet, then stir in bouillon and salt. Bring to a boil, then simmer over low heat with fried noodles until tender and soaked in sauce, around 15 minutes.
