Classic budget-friendly pinto bean and meat dish made with dry beans - delicious and comforting.
Ingredients:
  • 1 pound dry pinto beans
  • 1 pound bulk pork sausage
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10 ounce) can diced tomatoes and green chiles, undrained
  • 0.5 cup ketchup
  • chili powder to taste
Instructions:
  • Rinse the dried beans, cover with water in a large saucepan, bring to a boil, then let sit for 1 hour. Drain and rinse, return to the saucepan, cover with water, and simmer for 2 hours until tender.
  • In a skillet over medium heat, sauté the sausage, beef, onion, and green pepper together for 10 minutes until the meats are evenly browned.
  • Combine the meat mixture with the beans, then incorporate the tomatoes with chiles, ketchup, and chili powder. Bring to a boil, then lower the heat and simmer for approximately 20 minutes until thickened.
