Upgrade homemade chips or roast potatoes with gourmet toppings.
Ingredients:
  • 4 large potatoes (about 300g each)
  • vegetable oil for deep-frying
  • 1 clove of garlic
  • a few sprigs of fresh flat-leaf parsley
  • truffle oil
  • 8 g Parmesan cheese
Instructions:
  • Peel and cut the potatoes into 1cm-thick chips. Parboil them in boiling salted water for 8 to 10 minutes until soft but still holding their shape. Drain them in a colander and let them steam dry completely - this step is crucial before frying. Preheat a deep-fryer to 180°C or fill a deep saucepan three-quarters full with vegetable oil over high heat. Prioritize safety by clearing the kitchen and not leaving hot oil unattended. To check if the oil is ready, drop in a bread cube - it should turn golden in 10 seconds at 180°C. Fry the chips in batches until they turn golden and crispy. Drain on paper towels, then season with sea salt. For a fun twist, thinly slice garlic and finely chop parsley to mix with the hot chips. If you prefer something fancy, lightly drizzle the chips with truffle oil (mix with olive oil if it's strong) and grate Parmesan over them. Serve immediately while hot.
