"Lime in the Coconut" Frosted Cheesecake Bars

Award-winning tropical layered bar recipe for a burst of flavors.
Ingredients:
1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
2tablespoons Gold Medal™ all-purpose flour
1/3 cupbutter or margarine, softened
1egg, slightly beaten
2packages (8 oz each) cream cheese, softened
1can (16 oz) cream of coconut (not coconut milk)
3tablespoons lime juice
1teaspoonvanilla
2eggs
1 tub (12 oz) Betty Crocker™ Whipped Cream Cheese Frosting
11/4 cups coconut, toasted
2teaspoons gratedlime peel
Instructions:
Preheat the oven to 350°F. Grease a 13x9-inch pan with cooking spray. Combine the cookie base ingredients in a large bowl until a soft dough forms. Press the dough evenly into the bottom of the pan. Bake for 15 to 18 minutes until golden brown. Allow to cool for 15 minutes.
In a large bowl, use an electric mixer to beat cream cheese until light and fluffy. Add cream of coconut and blend well. Mix in lime juice, vanilla, and 2 eggs until smooth. Spread the mixture over the cookie base.
Bake for 40-45 minutes until lightly golden brown and set. Allow to cool at room temperature for 30 minutes, then refrigerate for an hour to cool completely.
Gently frost over the filling, sprinkle with coconut and lime zest, cover, and refrigerate for 30 minutes. Cut into 6 rows by 4 rows for bars and store covered in the refrigerator.
