"Lime in the Coconut" Frosted Cheesecake Bars

Award-winning tropical layered bar recipe for a burst of flavors.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1/3 cup butter or margarine, softened
  • 1 egg, slightly beaten
  • 2 packages (8 oz each) cream cheese, softened
  • 1 can (16 oz) cream of coconut (not coconut milk)
  • 3 tablespoons lime juice
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 tub (12 oz) Betty Crocker™ Whipped Cream Cheese Frosting
  • 1 1/4 cups coconut, toasted
  • 2 teaspoons grated lime peel
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9-inch pan with cooking spray. Combine the cookie base ingredients in a large bowl until a soft dough forms. Press the dough evenly into the bottom of the pan. Bake for 15 to 18 minutes until golden brown. Allow to cool for 15 minutes.
  • In a large bowl, use an electric mixer to beat cream cheese until light and fluffy. Add cream of coconut and blend well. Mix in lime juice, vanilla, and 2 eggs until smooth. Spread the mixture over the cookie base.
  • Bake for 40-45 minutes until lightly golden brown and set. Allow to cool at room temperature for 30 minutes, then refrigerate for an hour to cool completely.
  • Gently frost over the filling, sprinkle with coconut and lime zest, cover, and refrigerate for 30 minutes. Cut into 6 rows by 4 rows for bars and store covered in the refrigerator.
