Texas Lime in the Coconut Muffins

Indulge in oversized coconut lime muffins - perfect for breakfast or a quick snack!
Ingredients:
  • 1.3333333730698 cups raw sugar
  • 0.75 cup virgin coconut oil
  • 0.25 cup grapeseed oil
  • 4 limes, zested
  • 1.5 cups whole wheat flour
  • 1.3333333730698 cups all-purpose flour
  • 0.75 cup flaked coconut
  • 2 tablespoons ground flaxseed
  • 1 tablespoon baking powder
  • 0.25 cup fresh lime juice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 10-cup Texas-size muffin tray by greasing or lining with paper liners.
  • Combine sugar, coconut oil, and grapeseed oil in a bowl and whisk. Then, mix in eggs and lime zest until the batter is smooth.
  • In a bowl, combine whole wheat flour, all-purpose flour, flaked coconut, flaxseed, baking powder, and salt. In another bowl, mix milk and lime juice.
  • Combine and whisk the milk mixture into the sugar mixture. Carefully fold the flour mixture into the sugar mixture until just combined, then spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven for about 40 minutes, or until lightly browned and a toothpick inserted in the center comes out clean. Let the muffins cool on wire racks.
