Spicy cumin and chipotle chicken and veggies in tortillas for a quick, easy skinny taco meal.
Ingredients:
  • 1 pound thinly sliced chicken breasts, cut into thin strips
  • 3 limes, juiced, divided
  • 2 teaspoons ground cumin, divided
  • 2 teaspoons garlic powder, divided
  • 2 teaspoons ground chipotle pepper, divided
  • 2 red bell peppers, cut into thin strips
  • 1 red onion, thinly sliced
  • 2 jalapeno peppers - stemmed, seeded, and thinly sliced
  • 4 multi-grain tortillas, or more to taste
  • 1 bunch cilantro, chopped
Instructions:
  • Marinate chicken in lime juice, cumin, garlic powder, and chipotle pepper for 10 minutes.
  • Cook a colorful mix of red bell peppers, onion, and jalapeno peppers with lime juice, cumin, garlic powder, and chipotle pepper in a large non-stick skillet until the veggies are tender with a slight crunch, which should take around 5 minutes on medium-high heat.
  • Transfer the seasoned chicken mixture to a non-stick skillet over medium-high heat and saute until fully cooked, 5 to 10 minutes.
  • Place the tortillas between paper towels on a microwave-safe plate and microwave until warm, for 10 to 20 seconds.
  • Pile vegetables and chicken onto tortillas; garnish with cilantro and a squeeze of lime juice.
